Pay attention to the best by or use by date listed on the packet of tofu you purchased as it is a useful indicator of how long tofu lasts in the fridge. The ideal temperature is 40℉ but here is a guide on how long it will last:

Tofu will typically last, unopened in the fridge, for about 5-7 days past the "sell by" date. However, be sure to use the tips below to check for signs of spoilage before consuming.

Usually, you’ll take the whole block and make a meal out of it. But if you only need a small amount at a time, the tofu will stay, opened, for 3-5 days in the fridge.

To keep it from drying out and to limit bacterial growth in the fridge, here are a few tips:
- Leave the tofu in its original container or transfer to an airtight container (preferably glass container)
- Change water daily, covering the entire tofu block
- Secure the container tightly with plastic wrap

How long does shelf stable tofu last?
If you bought the shelf-stable version in the aseptic containers (e.g. Tetra Pak), it does NOT need to be refrigerated until you open it.

Take the fresh tofu out of the fridge only when you plan to cook it.

Can tofu be frozen?
Yes, all types of tofu can be frozen! It will stay in the freezer for 3-5 months.
Ways to freeze tofu
If the tofu is open, squeeze out the excess water and store dry in a ziplock or airtight container for up to 5 months. To defrost, transfer the frozen tofu to the refrigerator 24 hours prior to using. Once defrosted, do not refreeze the tofu again. Consume within 2-3 days after defrosted.
For convenience, you can cut the block into desired portions and use a tofu press or blot with a paper towel to remove excess water; then, freeze as you wish.

When you pull it out of the freezer, it will have a darker brown color but once it defrosts, the color will resemble the original off-white.
And no matter how you froze your tofu, defrosting it is easy! It all depends on how much time you have.
- The best way is to leave in the fridge for 24 hours before using.
- You can also thaw in a water bath in warm water.
- Or run cool water over it in a bowl for a short time.
- You can also microwave it.
Once thawed, prepare it immediately or leave it in the fridge for 3-5 days. Do not refreeze.
