Because you can't have enough avocado toast, here are 4 ways to make it! Each variety can be easily made gluten-free using GF bread. An easy-to-make breakfast or lunch for any day of the week!
Jump to RecipeI don't know about you, but one of my favorite things to eat for breakfast is avocado toast.
Somehow avocado toast became the stereotypical breakfast of millennials.
But whether you're a millennial or not, avocado toast is Delicious...with a capital D!
It's also nutritious, versatile and can keep you fueled up all morning (or afternoon if you have it for lunch).
Ingredients you'll need
For all 4 toast variations
- 1 slice bread (gluten-free if needed)
- ½ avocado
For avocado toast with fried egg
- Fried egg (your way: sunny side up, over easy, over medium, or over hard)
- Olive oil cooking spray for making the fried egg (use a non-aerosol, propellant-free oil spray to avoid damaging your non-stick pan)
- Sea salt and and freshly ground black pepper
- Extra virgin olive oil
For avocado toast with boiled egg
- Boiled egg (cooked your way: soft boiled, medium boiled, or hard boiled)
- Hot sauce
- Sea salt to taste
For avocado toast with arugula and pine nuts (vegan-friendly)
- Baby arugula
- Pine nuts
- Sea salt and and freshly ground black pepper
- Extra virgin olive oil
For avocado toast with Parmesan cheese
- Shaved Parmesan cheese
- Crushed red pepper flakes
- Sea salt and and freshly ground black pepper
- Extra virgin olive oil
How to make avocado toast
For all 4 toast variations
For each of the 4 flavor variations, you're going to start by toasting the bread to your liking.
Then, mash the avocado with a fork in a small bowl.
Next, carefully spread the mashed avocado onto the piece of toast.
For avocado toast with fried egg
Spray a small non-stick skillet (I like using a pan specifically designed for frying eggs like this) with non-aerosol, propellant-free olive oil spray.
Heat the oil on medium.
Once heated, gently crack the egg into the pan and cook over medium-low to medium heat until the egg is done to your liking.
If you are cooking a sunny side up egg, you will not flip the egg, just cook until the whites are set (approximately 2-3 minutes).
If you are cooking an over easy, over medium or over hard egg, gently flip the egg when the whites are just about set and cook for 30 seconds for over easy, 1 minute for over medium, or 2 minutes for over hard.
Place the fried egg on the avocado-topped toast. Sprinkle on salt and pepper. Drizzle on olive oil.
For avocado toast with boiled egg
Place an egg in a pot and cover with water until fully submerged.
Add a pinch of salt and bring to a boil.
Once boiling, cover and turn off the heat.
Leave the egg to sit in the hot water in the covered pot for 6-10 minutes (6 minutes for soft boiled, 8 minutes for medium boiled and 10 minutes for hard boiled).
Once the time is up, carefully transfer the egg to an ice bath.
This will stop the cooking process and allow you to handle the egg without it being too hot.
Peel and slice into circles.
Add the sliced egg to the avocado-topped toast. Top with hot sauce. Sprinkle on salt.
For avocado toast with arugula and pine nuts (vegan-friendly)
Add arugula and pine nuts to the avocado-topped toast. Sprinkle on salt and pepper. Drizzle on olive oil.
For avocado toast with Parmesan cheese
Add Parmesan cheese, followed by crushed red pepper flakes, salt and pepper to the slice of avocado-topped toast. Drizzle on olive oil.
Tips
- Avocado toast is best enjoyed upon preparation. It does not store or keep well.
- Want to make more than one piece? Each of the flavor variations can easily be multiplied to make additional servings.
